      Mother's Day Salmon Dinner Recipe

      Roasted King Salmon with sweet onions


      Serves four


      Ingredients


      Salmon filet (allow for 5-6 oz. per person) King, Sockeye or Silver


      1 tsp. olive oil


      Salt and pepper


      1/2 medium sized Walla Walla sweet onion thinly sliced (the thinner the better!)


      1 small lemon sliced very thin


      2 Tbsp. vinaigrette dressing (virtually anything will work here)


      1 Tbsp. brown sugar



      Method


      Pre-heat oven to 425


      Rub salmon with oil and seasonings, place in bake-proof pan, skin side down


      Toss the onions and lemon in the vinaigrette and arrange loosely over the salmon


      Sprinkle with brown sugar


      Roast at in oven until internal temperature of 125. Serve immediately



      Notes


      You can also do this on the BBQ grill, just be careful with the heat so it doesn't burn.


      This would be great with a crisp salad and a little grilled asparagus.
